Almond Mash Cookies Recipe (Sugar Free - Health Food - Gluten Free)
Origin: Modification of an existing recipe

Ingredients:
16 oz Slivered Almonds (or sliced)
1/2 Cup Honey
1 Egg
1/2 Tsp Baking Soda
1/8 Tsp Salt
1/4 Cup Melted Butter
1/2 Cup Chopped Walnuts (optional)
1 Cup Raisins

Directions:
A) Using a mini chopper or coffee grinder, grind the Almonds into a fine grain powder
B) Using a mini chopper or coffee grinder, grind the Walnuts into a coarse grain powder
C) In a large bowl combine Honey, Egg and Butter
D) In a smaller bowl combine Almond flour from A, Walnut flour from B, Baking Soda and Salt
E) Add contents of smaller bowl to larger bowl and mix by hand - do not use a mixer.
F) Add Raisins and mix by hand
G) Refrigerate for a minimum of 3 hours to make dough easier to work
H) Roll dough into round balls about one inch in diameter and place on a cookie sheet.
I) Using the back of a large spoon and some wax paper, mash the round balls into a cookie shape.
J) Cook at 325 degrees for 9-12 minutes or until cookies are slightly brown on the edges.
K) Allow cookies to cool on cookie sheet for 3-5 minutes after removing from oven.
