Apple Pancake

Ingredients:
1/2 Cup flour
1/8 Teaspoon salt
1 Tablespoon sugar
1/2 Cup milk
1 Tablespoon melted butter or olive oil
1 Egg slightly beaten
1 Apple-Fuji,Gala, Granny Smith or any other type

Directions:
1) Using a wisk, combine flour, salt, sugar, milk, butter and egg in a bowl to make the batter.
2) Peel the apple and place it on its side
3) Cut the apple into thin slices about 1/4 with core in center of slice.
4) Cut out core center circle from each slice
5) Dip apple slice into batter and coat both sides (keep other uncooked apple slices in batter while cooking slices)
6) Cook the coated apple slice pancake(s) with 1 tsp olive oil in a skillet for 1 to 1 1/2 minutes.
7) Flip apple pancake to cook the other side and cover with lid - cook 1 to 1 1/2 minutes .
8) Repeat process with the rest of the batter.
9) Allow the apple pancakes to cool on rack or plate for at least 2 minutes before serving. Serve with cinnamon sugar, or maple syrup.
